Wine bearing the Cabardès label must be composed of at least 40% Atlantic varietals (Merlot, Cabernet Sauvignon and/or Cabernet Franc) and at least 40% Mediterranean fruit (Syrah and/or Grenache). We've always been very enthusiastic about this slightly unusual blend, which has a very strong following among both customers and staff. It is deliciously easy to like, but interesting and different for the wine buffs, a Merlot-rich wine that has convinced more than a few people to alter their prejudices about that particular grape. It's ripe and aromatic, with the spice and herbal notes of the Languedoc enhancing plump fruit flavours; and, though it's not a heavy or a tannic wine - "tradition" cuvées are generally young and unoaked - it has more than enough structure to avoid facile jamminess and make each glass a pleasure.
